Crockpot Breakfast Casserole

Kaitlyn's class had a family brunch this morning. I was asked to bring a breakfast casserole. I decided to try something new and made one in the crockpot. It was really good! I think something like this would be perfect for holidays - waking up to breakfast already done on Christmas or Easter would be great!

Ingredients:
  • 6 beaten eggs
  • 10 slices of bread
  • 1 1/2 C. milk
  • 2 cups of grated sharp cheddar cheese
  • 1/2 lb sausage - I used bacon
  • salt and pepper
  • yellow mustard (optional)
Directions:
  1. Cook the breakfast meat. Drain remaining fat.
  2. Spread mustard on one side of the bread and cut bread in quarters.
  3. Beat eggs and milk together with salt and pepper to taste.
  4. Spray inside of crockpot with nonstick cooking spray.
  5. Layer bread, cheese and sausage in crockpot. I made two layers.
  6. Pour milk and egg mixture over everything.
  7. Cook on low 8 - 12 hours.
I actually made mine the day before and had it sit in the fridge and then turned on the crockpot when I went to bed.
